Rajasthani people are basically vegetarian. Rajputs eat non-vegetarian
food. Even among the Rajputs there were enough royal Kitchens.
Where nothing other than vegetarian meals are cooked.Marwaris
however are considered more lavish with the input in their Kitchen.
A typical meal for them could consist of pistta-longj served
with a glass of milk laced with cream.
Puris-normal tant in hot oil made with wheat flour. Tamatar
ki Subji a tomalo curry, Gattle ka Saag with Shavings of cashew
added and Sangri Ker Ka saag, Dahi Bhallas are than followed
by sooji ka halwa a pudding that is easy to make. The basic
ingredients of marwari food is the same that of Rajput food.Marawaris prefer heeng or
asafetida over the Rajput preference for garliec.
Pickles chutney and papad are the important parts of Rajasthani
food. Red Chilly, Amchur (dried mango power) and rai (mustard
seed) are the important ingredients of Rajasthani food.Bikaneri
Bhujia Jodhpuri Kachori, Mirchi bara are some of the Snacks
liked by every Rajasthani Dall Bati Choorma is also a speciallty
of Rajasthani cosine. It is a picnic meal. It is originated
from Jaipur is now the famous food for all.The daal consists
of a lentil curry, bati is a round ball of bread baked in charcoal
fire with clarified butter within it. Choorma is a sweet
dish made of bread bruised with jlggery or sugar and Desighee.
A variety of Batis are being made these days. The food of Rajasthan
is as colourful as its people and envoironment. There are not
many green vegetable available due to the scarcity of water,
the people of Rajasthan cook grain based food. Grains Besan
(gram flour) and curd is predominantty used. Traditionally the
food is served in Thali & Katoris. Bajra (millet Flour)
Roti & Khichra (A dish of porridge mixed with lentlls) are
eaten in winter season. It is similar to the most commenly eaten
dish called Khichri in other part of India.The difference is
here, the porridge replaces the rice as base. It is eaten with
Desi Ghee and accompanied by Jlggery or Karahi.
